Is there a way to set my newsletters to always load the images, every time I have to click on load content directly and I am finding that very annoying. I can't see if I can setup a mail rule to load the images on my newsletters. It feels limited. Any suggestions?

Have you checked Mail>Preferences>Viewing>Load remote content?
Are you running any VPN, Anti-Virus, or Cleaning apps?
If you see an "Unable to load remote content privately" at the top of an email, it might be because you're using a Virtual Private Network. Mail will not load content without your permission, but if there's something that you need to see, you can bypass it by tapping the "Load Content" option on the warning.
When you use "Load Content" with a VPN enabled in this way, the content will be loaded through the VPN rather than through Mail Privacy Protection so you will still have some protection from the VPN. You can also turn off the VPN to try get the full benefits of Mail Privacy Protection.
Note that this error message can also appear on macOS Monterey when using a VPN with Mail Privacy Protection enabled.

Nope, that option doesn't exist in Mac Mail on Monterey 12.3.1
As you can see, this is the options I have.
I was using Sophos, but for some reason, that got worse and worse, I started to dislike that anti-virus software, so I only changed to Avast recently, I still have some Sophos files stuck on my computer, that need clearing off.

I'm not on 12.3 at the moment, but you don't have this?
I have Avast One installed on my Mac Book, could that be causing it then? I don't have the VPN enable know.
Yes very easily... & the last time I used there uninstaller it made things worse by leave hidden Avast files. :(
