Yes. You can use pretty much any monitor with a Mac as long as it has a port that can plug into your Mac.

To use TWO displays on ONE cable from a Mac, that cable out of the Mac MUST be a genuine ThunderBolt cable, going to a genuine ThunderBolt device: Dock (or Display with additional ports to daisy-chain to a second display).
The Mac does NOT support TWO displays on a a USB-C cable alone, regardless of what device you connect. It MUST be ThunderBolt to support two displays on one cable.
Go to system preferences > displays > display settings and from there select extend display instead of mirror display.

Ok was trying to extend them as I would with a PC laptop. Have Lenovo laptop and I can use both screens they are not mirroring each other. With Mac they are mirroring each other. What am I doing wrong

So as long as the Dell display Resolution (not physical screen size) does not exceed "6K" over display port family connection, or "4K" over HDMI 2.0 connection your display should work fine at 60Hz.
At higher than "4K" over HDMI, the refresh rate would drop because HDMI is bandwidth-limited.
This is what is being recommended to truly have dual monitor access but is ridiculously priced HYPERDRIVE Dual 4K HDMI 10-in-1 USB-C Hub. I want the access for work but just starting. Is there something out there that would give me the same access but cheaper

No, you can’t, due to the fact that they are not both from Apple. A possibility is that you might be able to toggle your monitors.

Did that it's not detecting 2 monitors at this time. Only recognizing 1 monitor

Would I need to buy another type docking with the dual HDMI to get the laptop to recognize that there are 2 monitors instead of one. I saw a YouTube video advising of get a hyper dock to make it work
