Using MST with a 2019 16" MacBook Pro

I'm looking for some advice...
For various reasons, I have decided to start using my own MacBook Pro in my office. My employer is a Dell house and on my desk, currently, is a WD19 dock.
Note, this is a WD19 and not a WD19TB or TBS.
This means that, according to Dell, the dock does not support multiple extended displays on my MacBook Pro - I believe because the model I have is using DisplayPort over USB-C and not Thunderbolt.
I have three external monitors on my desk and currently, I can only get a picture from 2 of them. They are Dell U2417H's with MST enabled and currently daisy-chained using a USB-C > DisplayPort cable from one of the ports on my MacBook.
The third is at the end of the chain - it's an HP P24 G4. The configuration is currently MacBook Pro > Dell U2417H > U2417H > HP P24 G4.
All of the monitors, currently in use, are only 1080p, so I know that the machine isn't maxxed out in terms of what it can power. However, I can only get the picture to extend itself on the two Dell ones - whether the HP one is configured as the "last" in the chain, or if it's connected via HDMI to the docking station.
My understanding is that, so long as they support MST and it's not being forced over USB-C, I should be able to chain all three of them together. This doesn't seem to be possible, currently... I was considering buying my own Thunderbolt 3.0 docking-station, for us at my desk (ultimate solution, so I can return to only having one plug to connect each time I return to my desk with the machine) but I don't seem to be able to get it to work.
Can anyone advise? This is the first time I have attempted to do something like this with the machine and I have to admit, it's not something I'm overly familliar with...
