So I have my dads old iPhone and am trying to figure out how to delete his profile on the my health app. I’m logged into iCloud on this phone, but his health information is still in and I am not able to figure out how to remove his and put mine.

Reset the iPhone:
Frankly, I'd say it'd be wise to log out of his Apple Account on it, reset it to Factory Settings, and then set this up to your own account. Have your dad perform as instead here, including logging out of iCloud, and backing it up.
