How do I keep other applications from being able to access my health information on my iPad and iPhone.

how do I prevent other applications on my iPad and iPhone from accessing any of my health data. I’ve noticed a lot of games that have nothing to do with fitness or indicate they collect information. I consider that very private and don’t want anybody I don’t explicitly get permission to access it has access to it. Since Apple Advertises on important user privacy is, about this should be very simple. But I can’t figure it out. I suspect now it’s just false advertising
