Is there anyway to unsend picture messages through text messages? Someone gained access to my phone and was able to send themselves private photos of myself to their phone?

No, you can’t unsend anything. Did they gain access to your phone (meaning they had it physically in their possession while it was unlocked), or they hacked your Apple ID?

The only thing is to protect your iPhone with a passcode and Touch or Face ID, so that nodoby can use your device when it is locked.
