Is it possible to stop my watch to mirror or automatically control playback on my iPhone? Usually I want to see the watch face and not the reduced clock when I take a glimpse on my watch.

If you're referencing the Now Playing screen that appears on Apple Watch when something is playing from the companion iPhone, try this -
Navigate to the Watch app on your iPhone > My Watch tab > Display & Brightness. Do you see a setting for 'Auto-launch Audio apps'? If so, turn that off. Then test.

What you're seeing on Apple Watch when music is being played, is a built-in feature. There currently isn't a way to change the way this functions. You can provide feedback to Apple.
