Airplay gets annoyingly choppy every 2/3 minutes for around 10 seconds and then gets back to normal.
I have a 2022 MacBook Pro and the latest Apple TV. It happens with everything. Games, movies, streaming.

you can see how it’s choppy for 10 seconds or so and then gets back to normal.
it's unclear where you experience this issue
is it from a game running on the appletv bought in the app store?
is it airplay mirroring from the macbook?
if the later it could be some sort of network interferences, of cause my first step would be to try to remove power from wifi router and appletv for 30 sec
