I deleted a game off my Apple ID, but when I try to connect a new game account to my Apple ID it says that game is already connected. How do I completely remove the games connection to my email? The games customer support stated I need to go through Game Center support.

If you've already associated an account with your Apple ID it is unlikely that you'll be able to associate another. If the previous game account has been lost or deleted the only available methods of recovery will rely on the developer.
