I have a series 3 watch which is being discontinued and will not be a part of the new updates. Can I still use the watch for text notifications and calls? Along with fitness tracker?

You can. The only thing is that there will no longer be any updates for the watch.
I don't know if the watch will still be supported on the next version of IOS and if it is for how many more IOS updates before it gets removed.
