I have an old iPhone, just upgraded and put SIM card in the new one. However my 4 year can still access most things. My wife and I are not good right now and my son (which eventually I want him to have that old phone and in working condition). I need to find out or figure out how to stop that phone from accessing my stuff. It’s really created a lot of problems

iPhone 11, iOS 15

That phone should be set up with it’s own Apple ID. See if this helps: What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support
