I set up a new Mac book, but it made me sign into iCloud, and now it has all the same data from my old laptop. I wanted these devices to be separate, but the second I logged into my Apple ID, everything from my laptop's desktop appeared on my iMac. How do I fix this without deleting everything from both devices?

Same Apple ID = Same Apple Data. You'll need to create and use a unique Apple ID. That will create the separation you want.
Data on the new Mac can then be safely deleted without fear of deleting data on the old Mac.
