What happened to "open in preview" option in Pages?

Still available in the Print dialogue as of Pages 11.2.
Click the PDF button, then choose Open in Preview to create a .pdf version of your Pages document and open it in Preview.
May have changed in Pages 12.n, to which I've not yet updated.

Progress. Its gone, though rather than Preview, it might be more expedient to click once on the Pages document and then use Quick Look with the spacebar.
In the Finder, and for several years, there used to be a Preview menu item in the Open With menu. Now, if you are determined, you can select Open with > Other… Set Enable to All on the shown panel below, and then click on Preview. That will display this info before you click on the Open button:
You don't want to select Always Open With as then any double-click on a Pages document will open it in Preview. Using this same arduous approach, you can open Numbers, Keynote, Word, Excel, and Powerpoint files in Preview too.
Still present in Pages v12.1 if the goal was opening a PDF in Preview, and not the original Pages document as I posted about above.
