Can I use an Apple desktop monitor as a second screen for a ThinkPad laptop?
If so, is using two Apple monitors so I can have triple screens with my ThinkPad an option? It’s a work laptop so using a mac is unfortunately not an option.
*One more quick question. If I bought a mac desktop or laptop would I be able to use two monitors so I could have three screens?

In a word no not directly from Apple. Please remember Macs are computers, they are NOT external displays for other devices. However you may be a candidate for Luna Display, please Google that.

Some Macs support more than one monitor, some don't.
All 27" iMacs and many 21.5" iMacs. The current 24" iMacs support 1 external display, however www.macsales.com has a device that will allow support of up to 2 external displays. You can find that adapter by clicking https://eshop.macsales.com/item/OWC/CADPDL2HDMI/

I just assumed that if I bought a mac desktop along with a separate monitor (or two) for personal use I could use the spare monitors with my Mac in my free time and just disconnect them from my Mac and connect them to my work ThinkPad so that I could have double (if possible three) screens at the same time.

Actually the Mac mini can support two displays.

FWIW, there are no new 21.5" and 27" iMacs at this time, only refurbished models.

FWIW, when you said monitor I assumed you meant a monitor. If you meant a desktop Mac, then no, you can't.
