Apple Intelligence is now available on iPhone, iPad, and Mac!
Just updated to the latest MacOS 12.5 Security update. Now my trackpad and keyboard randomly freeze for many seconds, and eventually, randomly they just start working again.
ALSO, this is NOT a bluetooth issue. I plugged in a mechanical mouse and that did not fix this random problem.
I would first try an SMC reset as well as an NVRAM reset. please see these apple support documents:

Reset NVRAM or PRAM on your Mac - Apple Support
if that didn't work, or if you have an M1 / M2 Mac, then I would start the Mac in safe mode and see if the issue persists.

sometimes a safe boot followed by a normal boot will resolve issues such as this.

Give this a try: boot into Safe Mode according to How to use safe mode on your Mac and test to see if the problem persists. Reboot normally and test again.
NOTE: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
Well, the solution was even simpler. I tried rebooting into Safe Mode, but Safe Mode did not take for some reason. Before I could try rebooting again, I noticed the problem had disappeared. So far, two days later, the problem has not reoccurred.
