I used to be able to print whatever size document I wanted from my phone to my air printer, but after the most recent Apple Update, I noticed that the only option is to print 4x6. There is no drop down to change this. Can anyone help?

Millions of users who have updated to "most recent Apple update" must have a similar issue. Unless you mention what printer is this or were you using a third-party app etc, many in this forum may not be able to respond positively to the issue you are facing.

Powered off the iPhone, power off printer, power up iPhone, power up printer?
Troubleshooting steps that you have taken?
Checked with support at the printer manufacturer for any updates?
It's obviously a very isolated issue. If this were a general problem, the support site would be flooded with posts. I see no other reports similar to yours.

EcoTank is normally used for Epson printers (Canon has MegaTank models).
Without knowing which one of the many possible models you have, it is difficult for us to help.
