Erasing data using disk utilities

Trying to erase my disk with Disk Utilities but Command-R is not opening the folder I need. I have Mac (Retina 5K, 27-inch, Late 2014) with 3.5 GHz Quad-Core Intel Core i5 chip and macOS Big Sur. The erase disc icon on Disk Utilities is inactive. What do I do?

It brings up a question: what are you booted into trying to do this? You cannot erase the disk you are booted from. You need to boot into recovery or an external boot disk:
