How to save a few pages of a pdf document into a separate document

I know how to save a few pages of a pdf document by printing to pdf and just selecting the pages I want to save a separate document. However, this does not seem to work for all pdf documents. For some, when I go into the drop down "print to pdf" menu the only option is to "save as postscript". Any ideas?

Add, delete or move PDF pages in Preview on Mac has some guides on how to use Preview to edit a pdf. I have saved a sub-set of pages by creating a copy of the document and deleting the pages I don't want (using the thumbnails) then saving the remaining pages as a new document.
