With the new mac os, Itunes is gone. We now use finder but there is no information on how to use your iMac to re-arrange all of the apps. in your iPad or iPhone. It takes a long time to do it from your phone if you have tons.
The ability to organize iPhone apps from a computer was discontinued when iTunes 12.7 was released in 2017, even before the iTunes app on Macs was discontinued. Sorry but there is no longer an option to organize them that way.
