Apple watch information
If a friend logged into the apple watch that was later gifted to you, can they still see what’s going on in my phone ?

They would have had to go through the activation lock removal (part of unpairing) before you could pair it to your iphone using your Apple ID. In that case they have no access whatsoever to the Watch or its data.
