I am wondering if I can connect two external monitors to my Mac pro Monterey v12.5 w/ M1 max chip device?

Yes.

The 14" and 16" MacBook Pros can support 2 to 4 external monitors depending on the CPU type they have.

2 for the M1 Pro, and up to 4 for the M1 Max.
