Apple Watch Face

I think you may be a tad confused. The Micky Mouse watch face permits you to choose up to three different complications.

To make it simpler to customize, open the Watch App on your iPhone. Tap Face Gallery in the bottom center. Choose Micky Mouse. Choose the complications for top left, top right and bottom, choosing the complication options available by tapping each one where you see >

Once you have customized it to include the complications you want, see the ADD button at the top and tap that. The face will now be added to your available faces on your watch.

Can you post a screenshot of your watch?

I'm wondering if you have three complications that are all showing the date.
