I updated an old iPad iOS to 12.5.7, after that youtube didn't work. I tried updating youtube, and got err message:
"The current version requires iOS 14.0 or later, but you can download the last compatible version"
How to do this?

There should be a button with the message.
Sometimes it loops and does nothing so deleting the app might help.
Put it this way, if you are using something running 12.5.7 it can't be updated any higher and YouTube requires iOS 13 I believe. That may be why you aren't offered a newer YouTube version since.
Your alternative is to try using a web browser to watch YouTube and see if that works.
