Double click no longer brings up wallet, all the other widgets accessed by the crown also come up. I see this as a fault not a feature. If I want to see the other widgets I can press the crown.

OK......Let's try a Forced Restart:
Press and hold BOTH the digital crown and power buttons at the SAME time. Keep holding them until you see the Apple Logo (can take several seconds), then let them both go. Your Apple Watch will restart and you'll need to enter your passcode when prompted. See if double tap to pay works again.

Are you double tapping the elongated power button?
Yes, not the crown.
I turned off and then back on and now it works correctly. Apple support didn’t know this.
I'm glad a simpler restart corrected it for you.
