Why do I get scan text instead of paste when using gifs or trying to share something like my wordle results? This started after the latest ios update on my iPhone.

Let's temporarily disable the Live Text option under the Settings > General > Language & Region menu to see if that behavior still persists. That will help us to isolate this further.
Additionally, does this only occur with GIFs that contain text, or does this also occur with GIFs that don't contain any text?
Let us know, and we'll keep moving forward from there.
Now this does not help, because when you go to paste the scan text, it’s coming up and only that so you cannot paste
Following! this is happening to me too. I have tried all these suggestions, deleted apps, reinstalled, etc etc. How do we fix it?

I have this same rescan issue when using the Regran app. So now I can’t repost anything as zi can’t copy/paste the text. Why?
