Why does the iPhone copy/paste a link twice?
the second one is in parentheses.
it does it every single time. An example is that I’m copying a link from another text or my notes and it pasted it twice.

The behavior that you describe would appear to be a result of the source or method used to copy the link.
To test this, visit a website and then select and copy the page address from the Address Bar of your browser and attempt to paste it in another location. Then, if copying a link from a website or other resource, tap and hold the link to get a "Copy Link" option and paste that item. Test both the copying and pasting in various apps.
If you are copying the text of a hyperlink, you may inadvertently be copying not only the text that you're seeing but also the underlying link that is coded to make the text function as a clickable link, resulting in the duplication that you're describing.
