Go to Settings > Screen Time > Content & Privacy Restrictions > Content Restrictions. You may have to turn on some settings like Screen Time and Content & Privacy to get to Contents & Restrictions. Once you are on that page, change "Web Content" to "Limit Adult Websites". Now you can add a site to the "Never Allow" setting.

Thanks v. much Mac Jim ID, I’ve actually since found that by following the steps on the page below, I was able to set a 1 min (or any) time limit on the time I spend on the website every day 🙌
