Lean mean second Mac setup

I have an older MacBook Air that I like to use for video interviews as the camera is better, that is another conversation - but currently it is a clone of my newer MacBook Air with all the files from iCloud. How can I set up that it is a lean mean second Mac that is not slowed down with all the data I have on my newer Macbook?

Should I create a second Apple ID? Wipe all the information and set it up again?

Create a bootable flash drive and use it to install the OS of choice: Create a bootable installer for macOS - Apple Support


Once the drive is wiped and the OS installed, it wont be any cleaner than at that moment.
