I've had an Apple ID on my Gmail account which has been deleted. recently I Tried to Create a new one with the same Gmail but it won't allow me to set it to my Gmail; hence I Created my Apple ID with Yahoo and tend to change my Apple ID into Gmail but it says "This email address is not available. Choose a different address."

If you have deleted that Apple ID, it is no longer valid, it simply no longer exists and it no longer works.

If you use an email address (in your case, a Gmail email address) as an Apple ID and then delete it, you'll have to wait one year before you can use that email address again as an Apple ID.
