How come drag and drop for music is gone again????

See the thread you started in the Music on Mac forum. Sounds like you have iTunes Match (or its Apple Music Sync equivalent) turned on, and that's why you cannot use Finder-to-iPhone synchronization at the same time. As for how well Match/Sync work (or don't), that's a different kettle of fish.

It could be that you don't see much in the way of user interface controls for iTunes Match unless you go into the iTunes Store and subscribe to it.
