My Apple Watch Series 6, the Activity is going crazy with totals! How do I restart? Lights blinking on back of watch too.

Start with a simple Forced Restart. This should clear any confused software and clean up working memory.

If that doesn't help you might have to consider erasing (unpairing) your Apple Watch then re-pair and setup again. Hopefully you won't need that because it is a little more time consuming than a simple restart.
