Random Old Photos
I woke up this morning to Random photos in my camera roll. Some of the photos i had even deleted. I’m so confused on why it happened. I also Had just recently downloaded the 16.5.1 Update.

After installing a system update Photos may have rebuild your Photos Library to upgrade it to a newer format.
During this rebuilding Photos may detect lost and found older items that should have been deleted, but could not be deleted because of a library damage. Photos will collect such foundlings and show them in an album "Recovered items". Is there such an album or folder? If yes, check the items in it, if some of them are missing photos that need recovering, then delete the rest.
