Anyone else having sensitive screen issues after this update? I can't even type a text or do a search. It's so bad, that I don't even need to touch the screen and the phone is picking up the trail of my finger. When I tried to type something like quiz, i get "q i z we". Google comes out "g o igletq we". Trying to swipe is just as bad. Wasn't an issue before this patch "16.5.1 (c). Even just trying to swipe through the screen is messed up. Rebooting doesn't help.

It is unlikely that the 16.5.1 (c) caused those issues but it is possible. You can choose to remove the Rapid Security Response: Open Settings > About > iOS Version, then tap "Remove Security Response." Tap Remove to confirm.
Another thing to try is to force restart your iPhone: Force restart iPhone - Apple Support.
You could also try to reinstall iOS. To do so, see the section "If your iPhone turns on but gets stuck during start up" in the following article: If your iPhone won't turn on or is frozen - Apple Support.

Yes i had the same issue after an upgrade.
in settings, i changed the Accessibility/Touch/Haptic touch/Touch duration to slow, and it helped.
