Deleting health data

I once connected my Samsung Galaxy Fit 2 with my iPhone 11, and started to allow the Health app to read and access data. Last I checked, the Health app stored approximately 3GB of heart rate data (from Galaxy Fit 2). Deciding that I no longer needed that, I deleted the heart rate data from Health app via Settings. But unfortunately the data won’t go away (already deleted all the data from Settings. Any idea how to compeletely reset Health app?

Here is one method. It turns out Health data is not saved in an unencrypted iOS backup to a computer. So perform a backup to a computer (Mac or PC, not iCloud) then restore that backup.
