I accidentally deleted the folder, and when I went to restore it, it was greyed out. I was able to restore it, however, when I attempt to open it or move it to the correct location I get a message saying the folder is invisible.

I can tell you how to unhide a folder. I hope that is the single problem. If not, let us know.
1 Open Terminal.
2 Type the following, without the quotes, but with a trailing space, exactly as written; do NOT press enter yet.
”chflags nohidden “
3 Drag the greyed Documents folder and drop it on the same Terminal window.
Note: your command line should now look like this:
chflags nohidden /Users/you/Documents
(where insted of “you” your username appears, if course)
5 Press enter
Did you enable Desktop & Documents in iCloud Drive? That will make the folder invisible and there is nothing you can do to make it visible short of disabling Desktop & Documents in iCloud Drive.
Please ignore my previous post. I am pretty sure that Barney is right- Documents and Desktop in iCloud is what caused this.
To confirm, click on iCloud Drive near the bottom of a Finder window Sidebar, and see that there is a Documents folder there.
I don’t know why except something is amiss in the Finder.
Turn on the Path bar in Finder (View menu).
Select the hidden Documents folder and see if the Path shows iCloud Drive instead of your home folder.
I turned that off and my folder is still invisible.
