Every time I get in my car, no matter if my Apple Music app is closed or the car radio was turned off when I last turned off my car, my Apple Music starts playing the last song I was listening to.
How do I turn this off?

CarPlay should be located under Settings>General, just under "Picture in Picture.
What version of iOS are you running? Have you tried searching for CarPlay in Settings? On the Main Settings Screen, pull down on the screen to see the search box. Type in CarPlay.
