I want to stop my phone from typing what I’m saying

I did what was suggested above, and that worked, but it also removed the option of dictation when I wanted it. I would like the phone to stop dictation UNLESS I TELL IT TO dictate. I want the option to use dictation, but it does it all the time without me hitting the microphone button.

Is there a way to remove the auto part without disabling it altogether?

I just cured this problem. Go to settings>accessibility>voice control and turn off. THEN make sure that the huge mic on the lower right under the keyboard under "return" is not tapped while you are typing. If you hit it by mistake, it will have a grey circle around the mic - this is when the recording starts and everything in earshot is recorded into your message. Tap it to remove the grey circle. Unfortunately it is super easy to mistakenly hit and then you have a super long message going on and on while you are chatting to someone else. I tested this a few times. You can also, hit the mic and produce the grey circle and dictate...then hit it again to stop dictation. Hope this helps.
