What happened to DOCK, which gave me quick access to the 10 apps I selected and use most, in Watch OS 10? Also, how is pushing the side button easier or better than a quick swipe up to access the Control Panel?

No.
The dock was configured in the Apple Watch app on the iPhone and when you pressed the side button it would display only the apps you put in the dock. That is no longer an option as the side button opens up the control center

Have you tried using the App Switcher? Double tap on the digital crown.
Since there are so many conflicting responses I wanted to confirm the dock is GONE. The dock option in the apple watch app on the iphone is GONE.

I just had shoulder surgery and are minus an arm which makes using the watch difficult as it is. The dock allowed me to limit the number of pokes to get to my important apps.
I don't understand what the swipe up display is and will have to look at the release notes.
Relegating one of the only two physical controls on the device to the Control Center is absolutely idiotic.
If you double click the crown, the dock appears. It is just a different button to push.
Who knows what goes into fitting such teeny tiny amazing circuitry into a watch like this? Thre are all sorts of possible reasons this change was made. I personally love having to adapt... keeps my brain flexible.
For all of you missing the favorite app (like myself).
Someone pointed out that the favorite apps are now directly in the top of the app list.
Also, I noticed the app list in both view can be reorganised by maintaining down the finger on one app (like on iPhone) the apps can then be moved/reordered or deleted from the list.
I agree with Paul. I now use the Smart Stack after swiping up. However, I preferred using the iPhone watch app to edit the dock. Much harder to edit the Smart Stack right on the watch itself. (My fat fingers)
Wrong. Pushing the DC once opens the display of all apps. The Dock is gone.
What specifically in your mind is a Dock?
If you mean the App Switcher from watchOS 9 and earlier, that is no longer available in watchOS 10.
Are you using the latest software? The dock is gone! Geniuses at Apple got rid of it.
You are right. It just takes two VERY QUICK clicks of the Crown to get to most recently used apps! Weird, but it works. Go too slow and it will simply take you back to your watch face.
Just hit the side button, the one you used to use for Dock and the ping option is one of the many on screen.
There is also an Watch User Guide in the Watch app on your iPhone in the Discover tab.
That is the last apps switcher. It is not the dock that we can put up to 10 favorites.
Press DC once and you get all installed apps, not your favorites. Press twice and you get recent apps (as you described) but again, not favorites. Favorites is gone with the latest update.
