I just bought the iPhone 15 plus, and since day one (currently on day 3), I’ve taken several pictures and they only show on the little scroll thing at the bottom, when I press on it to enlarge or to see the image it gets replaced with another, how can I fix this issue

It sounds like you’re using the Camera app to attempt to view these photos. That is the incorrect method. The Camera app is used to take photos.
Photos should be viewed using the Photos app.

Which is exactly what I’ve been using, I’ve tried both using the camera app and the photos app and on both the image won’t show, it’ll show a totally different one and when I leave it pressed there’s an outline of the original picture that’s supposed to be showing
