It is frustrating that my recently upgraded Mac-Mail on macOS Catalina does not allow for adjustment of the column width, or removal of unnessary columns, which I can also see from this discussion.
What would be the best way of advising Apple of this issue?

FWIW, I no longer have a Mac running Catalina but you can certainly adjust the columns and disable most all the columns by control or right clicking in the header area and unchecking those you don't want.
Sorry. You are correct. I forgot Mail in Catalina was different than in previous and later versions of macOS. Been awhile. Nothing can be done about it. Catalina is no longer supported and Mail will not be changed.
