The Verizon store told my husband that if we got our daughter a watch with family set up she could access everything in my phone.
I wasn’t there but I told him that was in no way true.
is it?
I know they get a separate Apple ID so I don’t see how it could be.
plus who on earth would by someone a watch that could access their phone entirely?
If you setup your daughter's watch with Family Setup via:
Set up Apple Watch for a family member - Apple Support
she will NOT have access to the iPhone that was used to set it up. AFAIK, you can only choose to share your contacts with her if YOU COOSE to do so (see step 9 in the above link). Just note that some Apple Watch features depend on having a companion iPhone, and aren't available on an Apple Watch that you pair using Family Setup.
The only way she would have access to the paired iPhone is if you shared your Apple ID with her (which is strongly discouraged) and you setup the watch as though it was your own via:
