QuickTime used to be able to export audio extractions (from a movie) into .AIFF file format. Extracting audio these days is pretty easy, but is there a way to make the newer versions of QT Player (V10.15 and later) give you an export option?

ffmpeg export is much faster when video is ignored with -vn option.
For example, movie to .aif audio (pcm_s16le little-endian):
ffmpeg -i movie.mp4 -vn -c:a pcm_s16le audio.aif

Maybe you could use Music.app to import as AIFF and then use that?
I tried Music.app AIFF import but it treats .mp4 as a music video and does not convert it to AIFF.
But ffmpeg can convert movie to .aif audio (pcm_s16be big-endian by default):
ffmpeg -i movie.mp4 audio.aif
Shutter Encoder has a GUI for that:

I forgot to mention that I also have Pro Tools installed as a DAW on this Mac Pro, but trying to bring in this audio file as a converted sample (from M4a to .wav) only brought this otherwise robust application to its knees.
