Using the apostrophe key makes upper case letter to lower case

Hello everyone,

I have this issue on my iPad Pro but not my iPhone 14 Pro. When I am typing the first word of a sentence that uses an apostrophe, it automatically makes the first letter a lower case and I can't figure out how to make that stop. Has anyone else noticed this issue? Any help would be so appreciated.

For example, if I start a sentence – "We're" on the iPad keyboard pushes it a single space and turns it to "we're" without me physically doing it. It boggles the mind with frustration..
