I know I can sort my albums in different ways. ** I need to sort my entire library by date taken, not date added.

The Library view, like the Recents view, and Imports, are preset views set by Apple so that they can always be counted on to be the same. So you can't change what they show or how they show them.
You can make an album similar to Library by using a Smart Album with "Date Added" "is After" "7/4/1776" -- that should get all of your pictures (unless George Washington was a photographer.) Then you can sort it in the usual ways.

It will automatically display all files in the library, both video and photo. It will automatically include any new imports.
