When I start the pairing process manually, I get the following message:
" iPhone Out of Date. This Apple Watch requires a newer version of iOS. "
And as I said before I have tried everything I have found online that suggest how to fix it. I am sure there is one more thing that I need to try which will fix this issue. What is that? Help!

Which model Watch? That message indicates it is one that requires an iPhone with a higher iOS than your iPhone 7 can get. For example, if the Watch is a series 9 you need an iPhone that has iOS 17…which your iPhone 7 can not get. If this is the case you will not be able to pair the Watch to your iPhone. If you have someone else in your family that has an iPhone with iOS 17 they can pair it and set it up for you under Family Setup but you won’t be able to pair it to your iPhone. You will also have some limitations to some features.
