Change pivot table header text?

Not sure exactly what you are asking but in general Pivot Tables use the values from the data table on which they are based. Change the text in the data table, refresh the Pivot Table (Organize > Refresh Pivot Table) and you should be good to go.

Pivot Tables are great for looking at and summarizing your data in different ways, all without writing formulas. They're not necessarily the best for final presentation. If you need to format a Pivot Table to dress it up for presentation to others, select it (by clicking in it and then on the grid icon to its upper left) and from the menu choose Edit > Copy Snapshot.

Paste that snapshot somewhere on the canvas and edit it like any other (non-Pivot) table. Note that you will have to do this copy-paste again (or manually update values directly in the table) if you edit the data on which the Pivot Table was based. Refreshing the Pivot Table will not update that copy-pasted table.
