I would suspect some sort of hardware issue since the Kernel Panic log entry shows an "ECC error on page mapped by IOMMU".
ECC is Error Correction Code
IOMMU is Input/Output Memory Management Unit which is defined by Apple as:
Input/Output Memory Management Unit (IOMMU)
An input/output memory management unit. A subsystem in an integrated chip that controls access to address space from other input/output devices and peripherals.

So I take it to mean that the hardware detected corruption of some memory associated with an I/O device. I'm doubtful this would be a software issue, but I don't know enough about it myself to say for sure. I don't know enough details about Apple Silicon Macs and IOMMU, so this is just an educated guess. Maybe another more knowledgeable contributor will chime in to confirm or correct me.
Try disconnecting all external devices to see if that stops the Kernel Panics. If not, then the hardware issue is with your laptop.
If the Kernel Panics stop, then connect one external device to see if it triggers the Kernel Panics. Rinse & repeat until you find the device triggering the Kernel Panics. Worst case it could be a combination of devices.
You can try running the Apple Diagnostics to see if any hardware issues are detected.
