How do i output a 5.1 surround sound signal or Dolby surround signal from my Mac Studio

Sorry, final note, multi-channel is within spec for SPDIF optical, so technically that should not the problem. But, apparently, the mac is only "seeing" a 2channel device, as it does not give me an option for as I said surround.
The Mac Studio is connected to a CalDigit Thunderbolt 3 via Thunderbolt 3 cable; I'm sending digital audio out from that vial Optical SPDIF into the optical input on a Emotiva SMC 200.
Should add, I'm using Audio Midi to send 2ch 24-bit signal to the Emotiva. There is no option for 5.1 surround, or any surround. The only option is for two channel digital out.
