I finally called Apple tech support and explained my issue and they sent me a new watch. I returned my old one. I have Applecare+ for the watch. The first short run I did, it was good on the trails and dropped out twice for about 10 seconds around some traffic lights. I did the full trail run today and it never dropped out anywhere. So it seems there was some issue with my original Ultra 2. Maybe the barometer was on the low end of engineering tolerance or something. Hoping my replacement watch will keep performing well.
I did another run using 11.2 on my Ultra 2 and still have the dropouts. I tried it again because it had stopped charging so I unpaired it and re-paired it so thought why not try another run. As usual my Coros Apex 2 Pro was flawless. The only reason I care about the Ultra 2 is so I can have cell service and not need to bring my phone. I have sent two recent emails to tech support with no answers from Apple. After all the effort with tech support to try and fix the problem I now feel like they are ghosting me. I have now used my wife's Apple Watch 9 (no cellular) four times with no dropouts-using the Apple workout app just like on my Ultra 2. I am beyond frustrated now because the reality is that I now leave the Ultra 2 at home (unless I am testing it again) because it does not work right, but Apple seems to have no solution. So I have an $800 watch that I am not using for what I bought it for.
Everything is working perfectly (with the exception of elevation) on the watch so I don’t think it’s restarting issues, I’ll try it though and will get back to you in case it’s fixed

Hope you are right. I have the identical problem. It has persisted through many OS upgrades including iOS11.
I have cellular and I was within cell service during the run. This happens to me on every run with varying times of dropout. There is no rhyme or reason and occurs whether or not I have cell service.
Today using a different app elevation never dropped out. I will contact Apple but I seriously doubt a hardware issue. I had a different issue where the app paused. Not a watch problem.
This is a canned response and incorrect as @jeffyen38 is correct. Plus the workout functionality, which includes the altimeter works with no cellular or WiFi connection.
Maybe, other apps can tap into other sensors. What sensor on your watch is being used at what time and point?
Two hours with Apple tech support but nothing from them in two weeks. They said they would contact me when they had some news. Using 11.1. Love the watch except for the elevation problem.
Hopefully getting to the end of posting here with some sort of resolution. I tried unpairing my Ultra 2 and re-pairing it as a new watch and kept all 3rd party apps off the watch. Made no difference. Still have the usual elevation display dropouts. Finally talked with the tech support guy again, and since both Ultra 2 watches have had the same problem they do not want to send me another one. I was told that Apple wants more data, so I could go that route or go to an Apple store. I have had enough with the online support so am headed to the Apple store tomorrow morning. So far tech support has offered no suggestions for a fix over the phone. I think I may bring along all the watches I have that work fine and lay them out just for dramatic effect:) The only reason I care about the Ultra 2 is because of the cell service. Otherwise the other watches I have are better for running. I tend to have this belief that someone at Apple knows about this and how to fix it, but that may be a delusion:) Could be that nobody at Apple knows what to do.
