Used to be able to do it through the Fonts settings, but no longer. Why that disappeared is the minor question. More important, how do I do that now???

Mail Settings : Viewing panel : Use dark backgrounds for messages. That is a toggle that produces a white background when deselected.

Thanks! I guess I wasn't clear enough in my question. In the past, I've gone to the format pulldown to be able to add color backgrounds to my outgoing messages. That's no longer an option there, as far as I can see, so I'm looking for another way to do that.
